FANTASTIC FISH

For a wonderfully quick and deliciously tasty fish dish that kids—even those who say "I hate fish" —of all ages will enjoy, try the following:

FANTASTIC FISH

  • 1 1/2 pounds fillet, either sole, petrale, Dover, grey, flounder, or lemon
  • 1/2 cup olive oil plus additional to coat baking sheet
  • Good dash of coarse salt
  • 1 cup breadcrumbs, store-bought or homemade
  1. Place rimmed baking sheet on a rack in the lower third of oven. Preheat oven and baking sheet to 500 degrees.
  2. Wash and dry fish.
  3. In a dish deep enough to hold fish, mix oil and salt together.
  4. Dip fillets in oil and salt mixture, making sure each is well covered with the mixture. Let fish remain in oil until oven and pan are heated.
  5. When oven and pan are ready, use a pot holder while you carefully coat hot baking sheet with a light layer of oil. Working quickly, spread breadcrumbs on a shallow plate.
  6. Carefully dip each fillet in crumbs, shake off excess and place on pan, allowing space between each fillet.
  7. Sprinkle fish with oil and salt mixture that remains in the bottom of the bowl.
  8. Place baking sheet in oven; bake about 12 to 14 minutes or until fish is golden brown. Use spatula to remove cooked fish from sheet to serving platter. Accompany fish with creamy sauce (recipe follows). Serves 4

CREAMY SAUCE

  • 1/2 cup best-quality mayonnaise
  • 2 tablespoons well-drained sweet pickle relish
  • 1 scallion, or green onion, finely minced
  • 3 dashes dry mustard powder
  • Good pinch salt and pepper
  • Pinch cayenne pepper
  • 1 teaspoon sugar
  1. Mix ingredients together. Refrigerate until ready to use.
