Mini Cherry Cheese Tarts

Mini Cherry Cheese Tarts
Ingredients
Preheat oven to 350 degrees
- 2 - 8 ounce packages of cream cheese
- 2 eggs
- ˝ cup + 2 tablespoons sugar
- 1 teaspoon vanilla
- One box of Vanilla wafers
- 1 - 8 ounce can of cherry pie filling
- Cupcake tins (small size)
Preparation
- Mix cream cheese, eggs sugar and vanilla.
- Place I vanilla wafer flat side down in the bottom of cupcake paper.
- Fill each cupcake paper leaving space for topping.
- Bake for 15 minutes. Remove from oven and muffin pan.
- Place the tarts on a cooling rack and let cool for 10 to 15 minutes.
- When the tarts are cooled, top with teaspoon of cherry pie filling.
